Long-lost recipes at hilsa fest

Siliguri, Aug. 16: The monsoon is here and so is the hilsa.

From ilish bhapa (the fish steamed with mustard and poppy seeds) to doi ilish (cooked in curd and mustard), lip-smacking delicacies had made their way to a two-day fest — Epar Bangla Opar Bangla Hilsa Festival here.

Ilish or hilsa is an exclusive fare for Bengalis. But unfortunately, traditional recipes are fast disappearing from our kitchens. We organised this festival to bring back the old recipes,” said Nandini Chowdhury, the manager operations of Symphony Garden Retreat Private Limited that had organised the festival on August 15 and 16.

Symphony Garden also inaugurated their new multi-cuisine eatery — The Symphony Restaurant — near Pintail Village off Hill Cart Road yesterday.

The restaurant was the venue for the hilsa fest .
